(Vigna unguiculata) An excellent and sturdy crop introduced to the world from Africa, cowpeas sit as a very popular ingredient in African, Asian and southern cuisines. In the US, it is most widely grown in the southeast, where its ability to adapt to drought and harsh hot and humid temperatures, allows it to thrive. They can be eaten while green similar to snap beans, and make excellent stir fry and soups. They are also great cover crops where they prevent soil erosion and fix nitrogen.
