History: The journey of the Lakota squash is a tale of preservation and evolution. Originally, Alice Graham donated a collection of landrace squash seed to the University of Nebraska - Lincoln. This seed, which traced its lineage to the 1800s and the grounds of Fort Atkinson and Fort Robinson, was passed down to Graham through Martha Newman, and then from Newman's brother. When cultivated in Lincoln, a surprising diversity emerged. Out of 200 plants, just one bore fruit that echoed the original description. Recognizing the influence of Hubbard squash, and celebrating the diversity present, the University of Nebraska - Lincoln chose to curate a unique squash. This endeavor culminated in the birth of 'Lakota' - a decorative, ovoid squash renowned for its baking qualities.

Uses: The Lakota squash, with its fine-grained, nutty-sweet flesh, is a culinary delight. Its sweetness and texture make it ideal for baking purposes. Whether it's turned into a pie filling, roasted as a side dish, or simply baked and savored with a sprinkle of seasoning, the Lakota is a testament to taste and tradition.

Growing Habits & Planting Instructions: Lakota squash thrives in well-draining soil under full sun. For optimal growth, plant seeds about an inch deep, spacing them 3-4 feet apart. Regular watering will ensure healthy growth and yield. As the plant matures, its flame-orange hue with green streaks will emerge, signaling that it's time for harvest in about 95 days post planting. While the Lakota squash may be relatively new in its current form, its rich lineage ensures that it carries forward a taste of history in every bite.
