From the land of 10,00 lakes, this dark-hued wild rice is parched slowly to create a fine flavored rice that yields more volume per pound. It's distinguished by its uniform size and lack of broken pieces, and is lightly scarified so the cook time is similar to brown rice, 45 to 50 minutes.
