The Belgian classic for winter delicacy. ‘Witloof Chicory,’ also known as Belgian endive, is grown for its creamy white, torpedo-shaped heads produced from forced roots. The leaves are crisp, tender, and mildly bitter, a prized addition to winter salads and elegant dishes.
Roots are grown through summer, then lifted and stored in darkness to produce the pale chicons in cool weather. Each head unfolds like an ivory candle, a culinary treasure of patience and care.
Developed in Belgium in the 19th century, ‘Witloof’ remains the world’s standard for true Belgian endive—refined, complex, and exquisitely cultivated.
