The Determinate San Marzano Tomato is a classic Italian paste tomato selection valued for its exceptional sauce quality, dense flesh, and rich flavor. Traditionally, San Marzano tomatoes are indeterminate, but this Determinate San Marzano Tomato was developed through conventional selection to offer a more compact growth habit while retaining the hallmark fruit traits associated with San Marzano types. This variety matures in approximately 80 to 90 days.

Fruits are elongated and cylindrical, typically 3 to 4 inches long, with deep red skin, thick walls, and very low seed content. The flesh is meaty and dense, producing a smooth, concentrated texture ideal for sauces, pastes, roasting, and preserving. Flavor is rich and balanced, leaning sweet with low acidity, making it especially well suited for slow cooking without excess moisture.

The Determinate San Marzano Tomato is sometimes described as semi-determinate or semi-indeterminate in garden settings. This is because it was selected directly from indeterminate San Marzano lines and can still express some of that growth behavior. While plants remain more compact and set most of their fruit in a concentrated window, they may continue limited growth and production longer than a typical bush Roma. Semi-determinate is not an official classification, but rather a way some growers describe this in-between habit.

Plants grow as sturdy, manageable bushes, generally reaching 3 to 5 feet depending on conditions. Most fruit ripens over a relatively concentrated period, making this Determinate San Marzano Tomato especially convenient for canning and large sauce batches. A cage or stake is recommended to support heavy fruit loads, but tall trellising and aggressive pruning are not required.

While this tomato falls within the broader plum or paste tomato category, it is not simply a generic Roma.
