The smooth, sweet parsnip of kitchen gardens past. ‘Harris Model’ produces long, tapered roots up to 12 inches with creamy white skin and fine-grained flesh. The flavor deepens to nutty sweetness after frost, becoming a winter delicacy.
Plants grow vigorously in cool climates, maturing in 110–120 days. The roots store exceptionally well, improving in flavor after curing or refrigeration.
